The tongue-twisting name was Gabriele’s intention, borrowing the name and image of one of Italy’s most celebrated and ancient carnivals since the nineteenth century that takes place in Viareggio, in the Italian coastal region. Burlamacco is an elfish-looking and happy red, white and black carnival mask that has recently made its debut within Singapore’s two-hundred-year-old historical district of Chinatown. The Burlamacco suggests a fun, high-spirited and honest life, hence the restaurant’s reputable founders have intensified the meal experience by juxtaposing expertise and tradition in an unpretentious and genuinely passionate way at their eatery. This is evident as soon as the customers step into the restaurant and notice the row of suspended lampshades at the doorway that were specially hand picked for their striking resemblance to the red beacon worn by the Burlamacco.

Behind the modest facade is a cozy but nonetheless trendy house bathed in earthy tones and warm lighting. Atmospheric paintings can be found on the walls, with natural daylight spilling in effortlessly through a window. Accented with some old world charm, the fifty-seater has opted for a constitutional floor-to-ceiling glass cellar of over one hundred twenty Italian wines to enhance each all-around meal.
Lending a Tuscan sensitivity to the classic Italian culinary art, the menu sees contemporary herbs and vegetables, alongside a range of home-baked food and gelato, with native-style grilled meats dominating the menu. Fastidiously chosen and handpicked by head chef Gabriele, each ingredient is is selected from the best of the seasonal harvest as well as taking the best cuts of meat, which can mean operating with A battery of suppliers round the world. The Tuscan-born cook lives by the golden rule – “what you see on the menu is what you see on the plate”. Burlamacco’s signature dishes are simple and hearty – Beef Tripe Stew in a contemporary pasta sauce topped with parmesan cheese and parsley, Linguine Pasta with Boston Lobster in Spicy Arrabbiata Sauce, Black Squid Ink Rissotto presented with gold leaf, “Cacciucco” or ancient Tuscan Fish and food Soup served with garlic bruschetta and Slow cooked Beef Short Ribs with Marsala Wine Sauce.
